Mushroom stuffed pirohi

Today I was talking with Brother Tom about the Christmas Eve Holy Supper and he told me that Polish folks make an excellent pirogi/pirohi made with mushrooms. I've never had anything like that. Does anyone have a tried and true recipe that they would like to share?

Also today I spotted a fairy ring of mushrooms as I was headed home. Naturally I turned the car around and swung back to check them out. The cold had beaten them up pretty good and I couldn't identify them. With the temperatures dipping below freezing overnight you have to be quick to find them.

Yesterday I was thinking about morels...

Yesterday I was thinking about morels. I was cleaning out the garden, removing what was left of the warm weather crops. Everything is gone except for the root crops and things like cabbage, Brussels sprouts, kale, etc. The asparagus ferns had gotten golden brown and it was time to clean them up. The next time I see an asparagus fern in my garden the morels will be making an appearance. Morels may show up before the asparagus makes it's appearance but serious morel hunting seems to begin just about the time that we begin to harvest the first asparagus spears.
